Four dedicated and passionate restaurant devotees unite to give you Merne at Lighthouse, a contemporary restaurant with a view.
Caleb Fleet, Matt Dempsey, Graham Jefferies and Joshua Smith have travelled long individual journeys before arriving at this point.
Caleb was the face of Pettavel, at Mount Duneed, during its heyday. He believes wholeheartedly in excellent customer service and will go to great lengths to enrich your experience (he has been known to make obstacle courses for young front-of-house staff to climb over holding three plates as part of training). Caleb was more recently the food and beverage manager at the historic Vue Grand Hotel.
Matt met Caleb at Pettavel, where he rose to head chef. Since Pettavel, Matt opened the award-winning Gladioli, at Inverleigh, as well as Tulip on Geelong’s Pakington Street with friend and business partner, Graham Jefferies.
Graham, also a Pettavel alumni, is the current head chef of Tulip.
Joshua Smith, having completed three years at Tulip as sous chef, is a chef with huge ambition and the passion needed to deliver an exceptional dining experience. Joshua’s CV includes the Royal Mail Dunkeld and Gordon Ramsay’s Maze.
